Nov. 14th, 2012 08:01 pmI am a kitchen witch without an oven! As the weather gets cold, I like my muffins.
So today I tried microwave muffins.
MICROWAVE BANANA BREAD
1 1/2.c flour
3/4 c. sugar
1/2 c. plus 2 tbsp. soft butter
1/3 c. milk
2 eggs
2 med. bananas, sliced or mashed
1 tsp. baking soda
1 tsp. pumkin pie spice
1/2 tsp. salt
Combine ingredients in order given. Mix well. Lightly butter a microwave pan. Sprinkle with remaining nuts. Pour in batter. Cook for 7 to 9 minutes on full power or until done. Let stand 5 minutes before turning out of pan.
7 minutes is too long for a coffee mug! that one was a brick. I had a silicon mini bundt pan and the middle two rows came out fine. The end ones didn't cook.
nice texture, moist and very tasty. I substituted oatmeal for 1/2 c. of flour.
