Caramel Stuffed Apple Cider Cookies


1 cup softened butter
1 cup granulated sugar
1/2 teaspoon salt
1 box (7.4 oz) Alpine Spiced Apple Cider Instant Original Drink mix -not sugar free- all 10 packets (I found this in my grocery store near the hot chocolate mixes.)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
3 cups all purpose flour
1 bag Kraft Caramels (14 oz)

Preheat oven to 350° F. Line cookie sheets with parchment. (You really need the parchment!)

In a small bowl whisk together flour, baking soda, baking powder and cinnamon.

With your mixer (or an energetic spoon) cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy.

Beat in eggs, one at a time. Add vanilla and mix well.

Gradually add flour mixture to butter/egg mixture. Mix until just combined.

Refrigerate for about an hour. (If you're really impatient you don't have to do this, but it makes it so much easier to work with.)

When you are ready to bake, unwrap your caramels.

Scoop out cookie dough ball about the size of a walnut. (I used a rounded cookie scoop-full. My scoop holds about a Tablespoon.)

Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely. Place on parchment covered cookie sheets 2 inches apart.

Bake 12-14 minutes, or until very lightly browned around the edges. Please don't over-bake!

Once the cookies are done, slide the parchment off of the baking sheet right out onto the counter. Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down (either on the parchment or on a rack.) If you forget about them and they cool too much and stick to your parchment, put them into the freezer for a few minutes and they'll pop right off.

Yield: about 4 dozen, depending on how large you make your cookies (or how many caramels have been snitched out of your bag before you begin.) Store in an airtight container.

So, it's December again, and I am posting seasonally appropriate bits of Youtubery.

We're kicking off with Hanukkah, which starts at sundown tonight.

It's Samhain again.

The Sun lies abed until nearly seven, where I am, and he retires earlier each evening. And he'll be lazier and lazier until the Solstice. I think it's because he's not himself, but rather a ghost, haunting us until his rebirth.

The trees are orange and yellow and red. Some are still deep green, others are nearly bare. Rough Brother North Wind shakes and rattles and does his best to strip them bare so he can dance among their nakedness.

The garden is still putting out cherry tomatoes and carrots. I expect we'll see a couple until Thanksgiving, but everything else has died. Time to mow it off and prepare for next year.

The wheel has turned decisively to Night. Mother Night spreads her long hair, all the stars caught in it like cold diamonds. Orion hunts his way across the sky, with his faithful hounds at his heels.

Cernunnos hunts the night sky tonight. Astride his jet black steed, his huntsmen likewise on horses or he-goats, accompanied by black dogs with eyes like saucers, he hunts the souls of the dead that have gone wandering in this last year. None see him pass in safety, and mortals may be taken along to the Land of the Dead.

For tonight, the walls between the worlds are thin. The living cross more easily, and our beloved dead return to remind us that they do not forget us so we should not forgeth them. As a pagan prayer for the dying says "We are here and the beloved dead await. Go from love into love."

I had to go out for gas. I'm running on fumes.

Our neighborhood is REALLY dark. No street lights for a block and a half either way. Nobody's house lights or porch lights are on. The usual orange sky glow was muted.

And my car key wouldn't unlock the car. Not either of the keys. And I can't see well enough to tell which is which. So I try one and the other and one and the other and finally on the third try one gets it.

Did I mention I'm afraid of the dark?
Did I mention I'm writing zombies?
Did I say it was really dark and I'm AFRAID of the dark?

Angel is going to sit here quietly and breathe for a while.

Made latkes. Very good.
Kids like them with sour cream. Applesauce on them is a bit strange, but good.

We told the story of the Oil that Burned for Eight Days. Bunny wanted to know about a Menorah. I said maybe when everyone's a bit older.

We mark Hanukkah because of great-grandfather (6 times removed) Gingrich, a Jewish peddler who married into the family in the mid 19th century.

So, I dragged my 3 smallest around the neighborhood for an hour and a half. My skeleton, Batman and princess were hits. I wore my hippie dress with no bra and all my hair down from a center part. Looked totally 60's Mama Cass. Bunny went out with her best buds.

We took up with a witch and a guy being eaten by a cannibal, and their ninja and cowboy. Quite fun. My boys know their boys.

Very tired now. Dollface got tangled up in a branch and took a header, which pretty much killed us for the night.

Bunny made an abstract pumpkin with a nifty mosaic design. I'll get pics.

our lights are all out, so the mousy bars are all mine! Mine, mwahaha mine!

It wasn't the Snowman Nativity Scene. It wasn't the "Smile, Jesus Loves You" Saf-T-Pops that were labelled "kosher." It wasn't even a plethora of cheap "Jesus loves you snow much" winter merchandise.

I am not sure if it was the Praying Hands chocolates or the Smiley Bead bracelet with a cross on it that sent me into a spit-take. But the cross-shaped suckers didn't help. And the fact it's all imported from China (Oriental Trading Company Inspirations catalogue) does nothing to endear the whole sentiment.

It's only October and I'm ready to Bah-Humbug my way through the Hols. I'm not done shopping (and I should be). I don't have a thing wrapped. I don't even have the fragging Halloween costumes done, don't talk to me about Christmas!

It's Easter. Am I heathen for not wanting to go to church?

Getting 4 kids around, then picking at them for not sitting still (when I want to fidget myself), making them behave (when I'm bored enough to act out) and chastising them for bad behavior all the way home...the whole idea just wears me out.

And I'm sure it's not leaving a good impression of church, God or ritual with them either. Maybe we'll worship at home in a way that isn't stressful on Mom.

And I've been up since the stupid cat dragged in a cardinal this morning. The poor bird was still alive. Rustling and squawking are not a pleasant wake-up call. Must get window fixed so cat stays in.

Note to self: yarn needles and French Vanilla pudding

On the fannish front:
Luke is finished, except for embroidering his face. Not bad. Han is next. Or maybe Leia. I'm afraid Vader's going to kick my butt. He's looking like a lot of embroidery.

And I did some writing. The memoir fic is getting darker by the page. The problem is the frst person PoV doesn't let us see *why* it's all happening the way it is. The best I can think of is the Big Expositional Scene where Luke Explains It All. And I do hate those.

Also read in the remix pages. That looks like such fun.

The BNFs are all gafiating around here, and I feel so alone. ;-)
Following the kerfuffles in Firefly makes me glad I never got big on the fandom. Also makes me think twice about vidding. But the vidding has me in thrall even harder than the photo manips do. I literally dream about making videos. I really need the equipment.

Rewrote the ending of "Invitations" so it's a little less depressing. J over at "Imperium" likes slightly less gloomy ends.

The kids are getting excited about the trip to KC. I am too. My dad is too, I can tell. Dollface is crazy about her "gampaw." She's pretty crazy about her "Gampaw joe" too (mom's husband). And Obi is ready to beat him at some more chess.

There is nothing more delightful than having a whole day spread in front of you with no one else to take care of for a whole 9 hours.

I had a lovely day yesterday, cranking my tunes and baking, cleaning while I watched "24."

Delivered 4 dozen pastel easter egg cookies to daycare.

Today, I was sick. I slept most of it off and got up at 11.

Just finished boiling the eggs to be dyed. Bunny and I went shopping with her birthday money. She got 3 pr of pants and a Matilda video. (She's a Roald Dahl fan.) She's still got about $55.

Started Luke's hair today. I'm almost to his nose. I'm embroidering the facial features (except eyes). He's cooking along nicely. Still working with 4 colors. Long swaths of black have been replaced with long swaths of buff.

Talked to mum. She was dying eggs with other grandchildren. Seems to be doing better. She's hating the sugar-free diet, but finds she can live with it.

Chili Cheese Pringles ROCK! Go, buy. Encourage the company to make them permanent.

Dentist Monday. Urgh.

Must make jello eggs this weekend. Bought lots of jello.
