Today, going shopping with Bun (Dollartree) and taking her to a photo shoot. I have a church meeting.
Tomorrow, physical for work. AUGH!
Thursday is payday for Mudd, and library.
Friday he and Bun leave for Montana. A last adventure together before she heads off on her own great adventure.
So, I'm on my own, with 3 kids, (which means hardly baching it) for a couple weeks.
Obi made Spicy Chicken Drumsticks last night. Not bad at all.
Basically, coat the chicken with a mixture of
6 Tbsp. chili sauce
1/4 c. soy sauce
1 Tbsp. oil
1 tsp. spicy brown mustard
And bake. (I bet it'd be good on the grill too)
Jonner is making Ham and Swiss Mac tonight.
Ham and Swiss Mac
2 c. uncooked macaroni
1/4 c. butter
1/4 c. flour
1/2 t. salt
2 c. milk
1 T mustard
1/2 t. worcestershire
2 c. shredded swiss
2 c. diced cooked ham
1 (2 oz) jar pimiento, drained
Cook macaroni. In medium saucepan, melt butter, stir in flour and salt. Add
milk mustard and Worcestershire. Cook, stirring constantly, until bubbly and
thickened. Melt in cheese. Add macaroni, ham and pimiento, mix well.
Heat through. 6-8 servings
And Oli and I are making chocolate crinkle cookies
1/2 c. white shortening
2 tsp. vanilla
6 Tbsp. powdered cocoa
2 c. flour
1/2 tsp. salt
1/2 c. powdered sugar
1 1/2 c. granulated sugar
2 eggs
2 Tbsp. vegetable oil
2 tsp. baking powder
1/2 c. milk
1/2 c. chopped nuts (optional)
Cream shortening and granulated sugar together. Add vanilla and eggs, beatuntil light. Sift cocoa, flour, baking powder, and salt together and add to shortening mixture. Blend well. Add milk and stir until smooth. Add nuts if desired. This will be quite soft, refrigerate 3 hours or overnight. Shape dough into 1" balls and roll in powdered sugar. Place 2" apart on greasedbaking sheet. Cookies will flatten, crinkle and spread. Bake 350° for 8-10 minutes. Cookies should be moist inside like brownies. Cool on racks untilthey are hard enough to hold their shape. Store in airtight container. Makes 4 dozen.
Next week, Obi gets to choose dessert, Jonner gets to do Saturday supper, and Oli gets to make Sunday dinner.
All part of my sealth campaign to teach my kids to cook. And get some variety into a menu that is too heavy on taco mac and grilled burgers.
