Nov 1 Pumpkin Muffins
If you carve your Jack o Lantern on Oct 30 or Halloween proper, you can eat it.
On Nov 1, cut Jack into four pieces and bake him at 350 until you can stick a fork in him. Then run him through the blender or mash with a potato masher or use a mixer. Freeze the puree by 1 and 2 cups in ziplocks.

To make muffins, combine dry ingredients, and then mix in wet ingredients until just combined; the batter should be lumpy. Grease muffin tin and fill cups two thirds full. Bake in a preheated oven at 400 degrees for 15-25 minutes.

2 to 2 1/2 cups all purpose flour. You can substitute other grains for 1 c. of the flour. Cooked cereal, uncooked oatmeal, whole wheat, whatever you have. If you use cooked cereal, reduce the milk.
1 c. liquid. Milk. Buttermilk. sour milk, fruit juice, powdered milk reconstituted with your choice of liquid
1/4 c. fat. oil, melted margarine, peanut butter. You can leave this out if you use a wet addition, but the texture will change a bit.
1 egg
2 tsp to 1/2 c. sweetner. Sugar, brown sugar, honey, molasses (can decrease milk by 1/4 c. for the liquids)
2 tsp baking powder
1/2 tsp salt (optional)
Up to 1 1/2 c. Additions. If using more than a cup of wet addition, decrease milk to 1/2 c
Dry Additions: Nuts, sunflower seeds, raisins, coconut, cocoa powder, chocolate chips etc.
Moist Additions: Blueberries, chopped apple, freshly shredded zucchini, shredded carrot, etc.
Wet Additions: Pumpkin puree; applesauce; mashed, cooked sweet potato; mashed banana; mashed, cooked carrot, etc
Spices: Use spices that complement the additions
Jellies and Jam: Fill cups half full with a plain batter. Add 1 tsp. jam or jelly and top with 2 more tbsp. batter.
Topping: Sprinkle cinnamon sugar on the batter in the tins.
Non-sweet Combinations: Use only 2 tbsp. sugar and no fruit. Add combinations of the following: 1/2 cup shredded cheese, 3 strips fried and crumbled bacon, 2 tbsp. grated onion, 1/2 cup shredded zucchini, 2 tbsp Parmesan cheese. Spices could include a tsp. of parsley and a pinch of marjoram.
Pumpkin Muffins
I like a cup of pumpkin puree, 3/4 c. raisins soaked in warm water, 1/2 c. brown sugar (instead of white) and 2 tsp. pumpkin pie spice as additions.
