This week, we're going a little geeky.
Easy-peasy Chicken Pot pie
1-2 c. cooked chicken, shredded
1 lb frozen mixed vegetables, heated
1 onion, chopped
2 ribs celery, chopped
2 packages chicken gravy mix, prepared
1 can of biscuits
Sautee onions and celery with chicken, and a bit of salt and sage if you like, until soft. Add chicken, vegetables and gravy to casserole dish. bake at 350 for 15 minutes. Add biscuits on top and bake according to directions on biscuit tube.
Banoffee Pie, beloved of Sherlock fandom, is banana pudding on crack. My version is a little different.
Crust:
1 package fudge-strip shortbread cookies
3 tbsp melted butter
Crush cookies fine, mix with butter and press into pie plate.
2/3 c. brown sugar
1 can sweetened condensed milk
2/3 c. butter
1/2 tsp vanilla
3 ripe bananas
whipped cream
Combine brown sugar, butter and milk in saucepan over medium low heat. Bring to boil. Cook 7 minutes, stirring
constantly. Mixture scorches easily. Remove from heat, stir in vanilla. Pour into crust. Slice bananas over top (i like to slice them into the plate first) Cool, then chill over night. Top with whipped cream.
