Honestly? Booze. Never saw a dry room party that anyone stuck around for. Like it or not, booze gets 'em in the door. The creative quality of the booze kept them there. I do find that grownups prefer cool decor with quiet music and low lighting so they can actually hear themselves talk. Snacks are always a bonus, as are giveaways like glow necklaces or stickers for badges that basically say, "I was there."
Booze. Good friends. Snacks. Auctioning off con virgins. Plushy theater (or readings). Interactive games and toys (twister and legos come to mind). Party favors. Decorations. Floor pillows and extra blankets for when people can't make it back to their room. I've also been to one where they showed movies on the DVD player in one room and everyone took turns playing the parts like going to a showing of The Rocky Horror Picture Show.
Oh, and costumes/themes can be a blast. I went to a "Hoth" party once. The dude in the Wampa outfit had women crawling all over him.
Having been to many sci-fi conventions, I can say without a doubt:
Klingons.
Okay, yes, there is liquor associated with Klingon room parties. Legendary types of liquor even but it's more than that. They decorate, the create atmosphere. They shout klingony things and are ribbed for pleasure. Get some Klingons and you'll have the best darned room party you can find.

and ROOM. lots of people lay the beds against the walls and bring in extra seating.if people cant get in or out for bodies it sort of sucks.
