Menu planning

Tues: Cornish pasties
Fill pie crust circle with
12 oz beef small dice 350g
1 medium turnip, small dice 200g / 7oz
1 large russet potato peeled and diced small
1 medium carrot peeled and diced small
1 medium red onion small dice
2 sprigs fresh thyme stems removed
salt and pepper
Bake 375 for 30 min

Thurs: Ham and bean soup

Fri: pasta e fagioli
1 pound extra lean ground beef, browned and drained
1 cup chopped onion
1 cup chopped carrots
1/2 cup chopped celery
1 can (14 to 15 ounces) diced tomatoes with juice
1 can (14 to 15 ounces) kidney beans, rinsed and drained
1 can (14 to 15 ounces) white beans, rinsed and drained
4 cups beef broth
1 ar (24 to 26 ounces) tomato-basil marinara or pasta sauce
1-1/2 teaspoons oregano
3/4 teaspoon hot pepper sauce, such as Tabasco
1/2 teaspoon salt
1/2 teaspoon black pepper
1-1/4 cups dry pasta (I used fusilli, but shells or ditalini would work well, cooked separately according to the package directions.)
1/4 cup chopped fresh parsley (optional, for serving)

Grated Parmesan (optional, for serving)

Sat: Chicken turnovers

Pastry for 1 crust pie
2 TBSP soft butter

1 c. cooked chicken
1/3 c. thinly sliced green onions

2/3 c. thinly sliced celery
1/3 c. sour cream
1 Tbsp. Dijon mustard

Roll out pastry to 12", brush entire surface with butter. Combine rest of ingredients, spread over 1/2 of dough to 1" from outside edge. Fold top over filling, and seal edges. Transfer to ungreased baking sheet, slash top 2-3 places to vent steam. Bake 425° about 20 minutes, until crust is golden. Cut into wedges, garnish with lettuce, green pepper and tomato slices, if desired.
